How to process the acerola powder

The acerola cherry, also known as the maple cherry, the cherry of the Antilles and the Jamaican cherry, is quite a small, spherical stone fruit. Since this very soft fruit, which is extremely fragile at its peak ripeness, cannot be exported in its normal state, further processing of acerola takes place immediately after it is harvested. Thus, acerola juices are produced on site, extracts are drawn and concentrate is processed.
